Simple Cucumber Salad

Simple Cucumber Salad  So this really isn't a salad it's more of an easy side. For years I wondered how my mom made this for events and thought it must be a difficult process. Little did I know it contained 4 ingredients and all of which we had in our fridge. She didn't tell me until one day I decided to ask and I couldn't believe it was mayo the whole time! Anyway give it a go and hopefully you like it as much as I do. Ingredients 2-4 cucumbers  3 tablespoons of mayonnaise  1/2 teaspoon salt  1/2 teaspoon pepper  Method Step 1: Peel cucumbers  Step 2: Slice as thin as possible Step 3: Add mayo, salt, pepper and mix well. Tips: *If you leave it overnight it gets a more incorporated texture  *You don't have to completely remove the skin of the cucumber as long as you slice it thin enough (the skin is really good for you)  *You can use sour cream instead of mayo
