I'm currently teaching ESL to young kids and when Halloween rolls around here there isn't much in ways of decor and costumes. So I make some for Easter in pastel colors and for Halloween in black and orange and then teach my students how to make them as an activity for the holidays. I learned how to make these from my Japanese teacher when I was really young. Cheesy baked eggplant This is healthier way to eat eggplant. Think of eggplant Parmesan but without the breading frying and extra fat. If you are a fan of eggplant or trying to enjoy a spin off of eggplant Parmesan you'll definitely enjoy this. Ingredients: 4 large eggplants  2 cups of pasta sauce  1 table spoon basil 1 tablespoon oregano 2 table spoons of Italian seasoning 1 table spoon on garlic powder 1 bag of shredded cheese   1/4 cup of water Method: Step 1: cut eggplant into thin large slices Step 2: sprinkle basil, oregano, Italian seasoning, over eggplant. Step 3: put eggplant in a baking dish grease if necessary Step 4: pour water over the eggplant Step 5: add pasta sauce  Step 6: bake at 350 degrees for 10 minutes  Step 7: remove dish and add cheese  Step 8: bake for another 5 minutes or until cheese has melted  Enjoy!

Pizza Pasta Bake This recipe is as simple as a few store bought ingredients plus a few herbs from your pantry, bake and done! Ingredients: Pasta 2 pound bag (Ziti, rigatoni or any kind will do) 1 package of pepperoni 2 jars of pasta sauce  1 table spoon Italian seasoning 1 table spoon garlic powder   1 table spoon basil  Mozzarella shredded cheese  Method: Step 1: Cook pasta for 6 minutes or until slightly soft. Step 2: Drain pasta and set aside  Step 3: Place cooled pasta in a non-stick baking pan or grease with a little olive oil Step 4: Mix pasta sauce, garlic powder, Italian seasoning and basil in bowl. Step 5: pour sauce over pasta and mix  Step 6: Mix in pepperoni slices into pasta. Step 7: Top with shredded cheese. Step 8: Bake at 350 degrees for 7-10 minutes or until cheese is melted Enjoy!

Easy 10 minute Herb Chicken  I happen to have found this recipe a long time ago it was a lot more complicated so I decided to cut a few corners.  This is the easiest chicken recipe I've ever made. With 7 ingredients and 10 minutes I don't think you can get easier than this. Easy Soft beef Tacos This may seem like it would take a long time but you can prep tomato onion mixture the day before and chop all ingredients and store in bags or plastic containers the night before. Leaving you only to cook up the meat  and heat the tortillas the day of. Mango Banana crumble Okays summer time here and bananas tend to overripe too quickly. I made this to make good use out of the 8 smaller bananas that started to look like they were on their last leg. For filling: 8 small bananas or 4 large bananas 1/2 cup of sugar white 1/2 cup of orange juice 1-2 cups chopped mangoes frozen or fresh For topping: 1/3 cup sugar 1 cup flour 1/3 cup butter 1 teaspoon salt Method for filling: Cooking time: 5-10 minutes on low heat Step 1 Chop bananas  Step 2 add bananas and mangoes, sugar and orange juice into a sauce pan Step 3 cook on low heat until mixture begins to boil  Step 4 place in baking dishes allow to cool Method for topping: Step 1 put flour, sugar and salt into a mixing bowl and stir with a fork Step 2 add butter and stir with fork until it resembles crumbles  Step 3 Once fruit is cooled sprinkle on-top of fruit. Banana Chocolate Cake~bread This is a great recipe if you have extra bananas that are about to go bad or are too overripe to eat. You can also customize it to suit your taste. I happen to think brown sugar works better than plain sugar for dishes involving bananas. I changed and halved this recipe since I have a small family you can easily double it and produce a bigger cake. Enjoy!
