Easy Soft beef Tacos


This may seem like it would take a long time but you can prep tomato onion mixture the day before and chop all ingredients and store in bags or plastic containers the night before. Leaving you only to cook up the meat  and heat the tortillas the day of.


Prep time: 15 minutes
Cook time: 15 minutes
Total time: 30 minutes
Materials: Knife, chopping board, bowl, tongs, spoon, frying pan.

Ingredients for beef:
  • Beef 
  • Salt 
  • 2 bell peppers 
  • 1 white onion
  • 1/2 lemon or lime
  • 2 table spoons olive oil
Ingredients for onion tomato mixture:
  • 1 large tomato
  • 1 large white onion 
  • 1/2  lemon or lime
Other ingredients:
  • Lettuce
  • 6-8 Flour or corn tortillas
  • 1 bag Shredded cheese 
  • Sour cream
  • Hot sauce
  • Store bought salsa 
  • Tortillas 
Steps for beef:
Step 1: Squeeze half lemon or lime on meat 
Step 2: Coat each side of beef with salt and pepper and set aside
Step 3: cut off tops of bell peppers and remove seeds.
Step 4: chop bell peppers length wise 
Step 5: chop 1 large onion and set aside.
Step 6: heat pan and pour on 1 table spoon of olive oil.
Step 7: cook until sides are slightly browned.
Step 8: remove meat from pan 
Step 9: pour in 1 more spoon of olive oil.
Step 10: put in chopped onions and bell peppers cook until soft.
Step 11: Chop meat into long strips and add to the pepper onion mixture
Step 12: Cook together for about 5 minutes.

Steps for tomato onion mixture:
Step 1: Chop tomato in half and clean out the seeds.
Step 2: Chop tomato into small squares and place in bowl.
Step 3: Chop onion into small squares and add to bowl
Step 4: Squeeze the 1/2 lemon over the tomato mixture.
Step 5: Stir mixture 

Other steps:

Step 1: rough chop the lettuce place in bowl and set aside.Step 2: heat tortillas on hot pan for about a half minute on each side or until small bubbles form.
Step 3: place shredded cheese into a  small bowl.
Step 4: place other items such as sour cream and hot sauce on the table. 




Add meat strips to cooked bell peppers and onions 

Tomato Onion and Lemon juice


Cut everything lengthwise to make for an even mixture

Stuffed Roasted Bell Peppers Ingredients: bell peppers, shredded cheese, crackers. Materials: Knife, baking dish/pan, plastic bag, spoon Step 1: Cut tops off of bell peppers about a half inch to an inch down and set aside. Step 2: Use spoon to scoop out seeds of peppers. Step 3: Place crackers in bag and smash away. Step 4: Put crumbs or crackers in hallowed out peppers. Step 5: Top with shredded cheese. Step 6: Place on baking pan or dish with tops off bake for 5 minutes at 350 degrees. Step 7: Place tops back on and bake for another 5 minutes. Prep time: 5 minutes  Cooking time: 10 minutes Note: You can also use bread crumbs in place of crackers and skip the smashing step. The reason you bake first with no top on is to get the cheese nice and melted and you replace it so that the tops get a nice roasted look.
