Stuffed Roasted Bell Peppers

Stuffed Roasted Bell Peppers





Ingredients: bell peppers, shredded cheese, crackers.
Materials: Knife, baking dish/pan, plastic bag, spoon







Step 1: Cut tops off of bell peppers about a half inch to an inch down and set aside.
Step 2: Use spoon to scoop out seeds of peppers.
Step 3: Place crackers in bag and smash away.
Step 4: Put crumbs or crackers in hallowed out peppers.
Step 5: Top with shredded cheese.
Step 6: Place on baking pan or dish with tops off bake for 5 minutes at 350 degrees.
Step 7: Place tops back on and bake for another 5 minutes.

Prep time: 5 minutes 
Cooking time: 10 minutes

Note: You can also use bread crumbs in place of crackers and skip the smashing step. The reason you bake first with no top on is to get the cheese nice and melted and you replace it so that the tops get a nice roasted look. You can also use your toaster oven so that you don't have to waste electricity and make the house hot especially in summer time. That's how I did it and it came out perfect. Same steps just a little more monitoring.

With Caps off Cheese melts nicely ...

Chocolate Covered Marshmallows

Chocolate Covered Marshmallows Ingredients:  Marshmallows, Chocolate bars, 1 tsp vegetable oil, sprinkles  Materials: a bowl for chocolate, skewers, a cup  Note: I used 2 chocolate bars, one bag of marshmallows. You can substitute sprinkles for any crushed topping cookies, candy, nuts. (To crush materials place in zip-lock or any bag and smash away). You can also use chocolate chips about one cup and a few generous spoons of sugar if they are unsweetened.  Method: Step 1: Stick skewers through marshmallows  set aside. Step 2: place sprinkles (coating of choice in a bowl) Step 3: place chocolate in bowl cover with cling wrap microwave for 2 minutes or until slightly melted.
