Chicken Francese

Chicken Francese  This is a really easy dish and delicious! Who knew? The hardest part was breaking the habit of breading by dipping in egg first. This took about a half hour to make and was very well received. If I would have known how easy this was I would have made this a long time ago. As always I hope you try it out and let me know how it turns out.  Ingredients: 1 lemon -half lemon juiced  -Lemon slices  1/2 cup of white wine 1/4 table spoon salt 4 chicken breasts  1/2 cup of all purpose flour 2 eggs beaten  2 table spoons of butter Method: Step 1 in a bowl squeeze half a lemon add wine, chicken broth stir well and set aside Step 2: in a separate bowl mix flour and salt and set aside Step 3: In another bowl beat eggs and add water mix well  Step 3: add olive oil to pan and heat until hot Step 4: take chicken breast and dip in flour cover completely Step 5: take floured chicken and dip in egg wash  Step : Cook each piece of chicken fo...

Chocolate Coconut cake

Chocolate Coconut cake Ingredients 2 eggs 3/4 cup cocoa powder 2 cups sugar 2 cups of flour 1 cup shredded coconut 1 cup milk 1 1/2 teaspoon baking powder 3/4 teaspoon baking soda 1 teaspoon vanilla extract Method: Step 1: Heat the oven 350 degrees Step 2: Mix flour, baking soda, baking powder thoroughly Step 3: add milk, vanilla extract and mix well Step 4: beat in eggs to mixture Step 5: stir in shredded coconut Step 6: Grease and fill 2 (9"inch) pans Step 7: Bake at 350 for 15 minutes check with a stick and make sure it comes out clean if not bake for 5 minutes more Tips *Before baking make sure you have all your ingredients are arms length *Grease your pans early if possible *You can use coconut powder instead of shredded coconut *Vanilla frosting works well with this cake *You can make this into cupcakes by lining a tin and baking them the same the cooking time will be shorter because you want moist cupcakes

This would make for a great appetizer for an Italian themed dinner. This is also a tricky way to eat more tomatoes which are really packed with nutrition.                 Easy German Sausage  This is really Easy!!! All you need is three ingredients and about 30 minutes and your main dish is done people will think you spent hours on it and who are we to lead them astray? Usually I don't like to post recipes that are this easy but I guess sharing is caring. Simple biscuits  These biscuits will be perfect for any meal these do include milk but not too much. You can make these in about 40 minutes 20 for prep and 20 for baking as you do them often you'll get faster and the time will cut down. It's always nice to make something homemade for a holiday or for any day of the week you and your family will notice the difference.  Ingredients 2 cups of all purpose flour 1 table spoon baking powder 1 teaspoon salt 1 teaspoon sugar  3/4 cup of milk 8 table spoons of butter  Method: Step 1: Mix flour, baking powder, salt sugar in a bowl Step 2: add butter you can mix it in with a fork until it looks like crumbs Step 3: add the milk and form your dough. Simple Cucumber Salad  So this really isn't a salad it's more of an easy side. For years I wondered how my mom made this for events and thought it must be a difficult process. Little did I know it contained 4 ingredients and all of which we had in our fridge. She didn't tell me until one day I decided to ask and I couldn't believe it was mayo the whole time! Anyway give it a go and hopefully you like it as much as I do. Ingredients 2-4 cucumbers  3 tablespoons of mayonnaise  1/2 teaspoon salt  1/2 teaspoon pepper  Method Step 1: Peel cucumbers  Step 2: Slice as thin as possible Step 3: Add mayo, salt, pepper and mix well. Tips: *If you leave it overnight it gets a more incorporated texture  *You don't have to completely remove the skin of the cucumber as long as you slice it thin enough (the skin is really good for you)  *You can use sour cream instead of mayo

                 Easy No-Milk Home Made Biscuits  This is something I've always wanted to make but since I happen to be lactose intolerant I usually don't keep dairy in the house. This recipe calls for no milk so it is perfect! In a short time or if you've run out of milk you can bake these too. H a l l o w e e n m u d c a k e I happen to love gummy worms if you haven't already noticed. This recipe is my chocolate cake recipe with a chocolate glaze. What's the best part of this recipe is that if your cake doesn't turn out perfect after you bake it even better! I ended up pulling the cake in three parts then piecing it back together. Apple Punch

Apple Punch Here is one of my favorite combinations apple and tequila it may sound strange but trust me its delicious. Here's how to make it... Ingredients 10 oz of tequila (dark) 1 bottle of apple juice around 1 liter 1 16 oz bottle of soda water or ginger ale  1 apple  Method Step 1: core and peel the apple and chop into small pieces put in punch bowl Step 2: pour apple juice, tequila and top with soda water Step 3: mix with a large spoon Enjoy!  Tips *If you are not a fan of tequila, vodka can be used instead but use a little less because vodka has a stronger taste  *You can add a few spoons of brown sugar to it if it's too strong or add more apple juice  *You can garnish with apple slices on each glass 

Candy guessing game

 Candy guessing game During Halloween I usually do this for my students. I simply fill an empty and cleaned pasta jar or box or food container with candy. Any kind will do get creative mix types lollipops, jelly beans, candy corn the choices are endless. All you do is have the children as they walk in guess the number of candy pieces in the container and write it down and put it in a ballot box. Then when you are ready you can announce the winner. Kids love to get exclusive prizes you can also give a lolly to each kid who participated.   Materials: Empty jar Candy pieces of paper pen, marker, or pencil  Shoe box with slit cut out decorated as you desire Method: Step 1: clean a pasta jar by soaking in hot soapy water over night remove label  Step 2: dry thoroughly and fill with candy.  Step 3: decorate ballot box and set at entrance with a pen and pieces of paper.  Tips: *Count as you add candy to jar or box. *Using a reusable food c...

Pumpkin pop game

Pumpkin pop game  This game is really easy to set up and is easy enough for the little ones to do. It's simple arrange orange balloons on brown packing paper or even the back of left over Christmas paper. Draw the outline of a pumpkin with a marker, pen or pencil. Then blow up balloons and before tying put a few pieces of candy in. Have the kids blind folded and spin them around three times and throw the dart at the balloons. Each child gets three attempts and gets to keep whatever candy falls out. I did this with my students last year and they loved it!  Materials: Brown packing paper  2-3 packs of orange balloons 2 packs of green balloons chop stick  push pin  glue candy  tape  Method: Step 1: make a popping stick by gluing a push pin to a chop stick you can make it pretty by wrapping in paper or a twisting ribbon or Chanel string around it. Simple Macaroni Salad

Simple Macaroni Salad  Ingredients: 2 pound bag of macaroni pasta 1 1/2 cups of mayonnaise  1/4 cup of spicy brown mustard  1 stalk of celery  Ham  1 apple  1 tablespoon salt 1 white onion Method: Step 1: Cook pasta according to instructions or for about 8 minutes  Step 2: set cooked pasta aside to cool  Step 3: Chop celery, onion, ham and apple into small squares Step 4: in a bowl mix mustard mayonnaise and salt  Step 5: Add sauce to cooled macaroni mix well Step 6: Add chopped ingredients to macaroni and mix thoroughly Enjoy!

Bloody punch This is an easy cranberry vodka drink for your guests not as strong as traditional and a little sweeter because of the apple juice and added sugar. You can garnish it with frozen finger gummies, worms, or fake spiders. Ingredients: 10 oz vodka  4 cups cranberry juice 4 cups apple juice 1 spoon full of white sugar Method: Step 1: Put vodka in a punch bowl  Step 2: Mix equal parts cranberry juice and apple juice Step 3: Mix in sugar and add to vodka  Step 4: Taste if it's too strong add more cranberry juice

Easy Halloween Punch  Ingredients:  Rum (dark works better) Orange soda 1 cup pineapple juice  gummy worms for garnish Method: Combine: 2 oz of rum for each 8 oz of orange soda  Or for every bottle 2 liters of soda use 2 cups and a half of rum (or a little more)  add pineapple juice once you have a good rum/soda mixture  Enjoy! Tips: * add 2 cups of rum first taste to make sure it's not too strong  *leave bottle of rum out for guest for extra spiking  * you can freeze gummy worms in place of ice  *you can also place fake spiders in glasses

Easy Halloween Hangers These can be made in minutes different sizes simple and easy way to decorate for festivities. Materials: Construction paper/colored paper black and orange  glue hole punch string, yarn, or packing twine Method: Step 1: start folding paper in accordion style or fan fold in one inch strips (fold on one side flip and fold on the other)  Step 2: fold to create a fan shape (fold long strip in half) Step 3: repeat in opposite color  Step 4: glue orange "fan" to black "fan"   Step 5: allow to dry for a few minutes  Step 6: punch a hole where two colors meet  Step 7: Run a string through and hang at desired height  Happy Haunting! Tips:  *you can lots of little ones using origami paper  *you can have kids help fold this is simple enough that they can help *you can also use one color for each or change it to match your theme

Halloween mud worm pudding This is a fun and easy recipe that you can do alone or with your children. These can be made like as in mine into small shot glasses to ensure that every guest gets one and to minimize waste. Ingredients chocolate pudding mix milk (for pudding mix) gummy worms chocolate cereal (balls) Materials : bowl hand mixer or whisk plastic cups spoon blender Method: Step 1: follow instructions on chocolate pudding mix Step 2: place in the fridge to set up Step 3: in your blender take a few cups of chocolate cereal and pulse until it looks like crumbs Step 4: take plastic cups and fill with pudding half way Step 5: fill with half crushed chocolate cereal Step 6: stick a gummy worm in each cup Enjoy! Tips: *You can use cereal that is a little stale for this and it won't make a difference *You can also blend up some chocolate wafer cookies or the black parts of Oreo

5 minute Tomato onion salad

5 minute Tomato onion salad This is an easy side for taco night you can make this ahead of time and add jalapenos for a real spicy side. This has 4 ingredients and it takes about 5 minutes to make  Ingredients: 2 large tomatoes  1 tablespoon dry oregano 1 lemon 1 white onion Method... Step 1: Cut tomatoes in half  Step 2: Remove the seeds using a spoon Step 3: chop tomatoes into small squares and place in bowl Step 4: sprinkle with oregano  Step 5: Chop onion into small squares  Step 6: squeeze the juice of one lemon Step 7: mix together Enjoy! Tips: * This can hold up for around 3 days in the refrigerator so don't worry if you made it in advance * If you add jalapenos make sure to remove all the seeds it will be extremely spicy if you don't  * You can make it without oregano but it does add more of a Spanish flavor
